HAGALAKAYI/BITTER GOURD PALYA

Ingredients:
Hagalakayi/Bitter Gourd/Karela - 3
Onion - 1
Chilli powder - 1 tsp
Salt - 1 tsp
Turmeric Powder - 1/2 tsp
Tamarind pulp - 1 tsp
Jaggery/Brown Sugar - 1 Tbsp
Water - 1/4 Cup
Oil - 1 Tbsp
Mustard Seeds - 1/4 tsp

Method Of Preparation:
Wash and chop bitter gourd into small pieces.


Add 1/2 tsp of oil and fry bitter gourd pieces for 5-10 minutes.


Add remaining oil. Add mustard seeds. When they splutter, add chopped onions and fry for 2 minutes. Add fried bitter gourd pieces, spices, tamarind pulp and water. Mix well. Let it cook for 20 minutes. Keep stirring in between. Add more water if required.


Add Brown sugar or Jaggery. Mix. Cook for 5 minutes.
Serve along with chapatis or Rice.
